Thanksgiving Treat: Butternut Squash Soup

Butternut squash soup is one of my favorite “cold-weather” soups.  Thanksgiving is a good excuse to have this delicious treat.

The following recipe is dairy, however condensed coconut milk can be used as a replacement for the heavy cream in the recipe.  For those Kosher people out there enjoy this soup as an appetizer for Shabbat, Thanksgiving, or  a meal for a regular weekday!

Thanksgiving: Homemade Pie Crust

Thanksgiving is right around the corner! I’m sure most people already have their menus planned and guests invited. However,  those last minute planners who need quick, easy, tasty recipes have come to the right page.

I happen to love dessert and I know most will agree!  Pie is a pretty traditional dessert on Thanksgiving.  With that said I would like to introduce you to my favorite homemade pie crust.

PIE CRUST: 5 tablespoons of melted butter (or non-dairy butter for parve) , 2 tablespoons of sugar, 1 1/4 cups of graham cracker crumbs

  • Melt the butter.
  • Put graham crackers in a plastic bag.

  • Smash until the crackers are in tiny pieces.

  • Mix the sugar, butter, and grahm crackers.

  • Place in a pie pan and smooth with a fork.

  • Bake for 10-12 minutes 350 degrees.

Slow Cooked Sundays: Sesame Chicken Skewers

Sesame chicken is a sweet plate mostly found in Chinese restaurants.  Put it on a skewer and it transforms into a football friendly finger food dish!

SESAME CHICKEN SKEWERS: 3 lbs of boneless, skinless chicken thighs, 3 tablespoons of sesame oil, 3/4 cup of soy sauce,1/2 cup Agave, 3 cloves of minced garlic, 1-2 red peppers, 2 tablespoons of sesame seeds, 3/4 cups sliced scallions (for garnish, 18 wooden skewers.

  • Cut pieces of chicken in 1 1/2 inch pieces.
  • Cut the red pepper in 1-2 inch pieces.

Red Pepper

  • Alternate placing peppers and chicken on the wooden skewers and place in crock pot.

Crockpot

  • Combine the sesame oil, soy sauce, agave, and garlic in a bowl. Mix and leave 2/3 cup on reserve for later.

Sauce

  • Pour sauce on skewers.

Crockpot with liquid

  • Cook on low for 2-3 hours.  Turn skewers over. Cook on low for another 2-3 hours.  Discard liquid.
  • The chicken is ready to eat.
  • EXTRA:  Grill the skewers on a stove top grill.

  • Serve skewers over rice and pour extra sauce for dipping.  You can also use hot sauce.
  • Garnish with scallions.

Tip:  Cut onions and place in between chicken and peppers.
